The Land

Rameh Valley,
Galilee Mountains

Our grove sits in the ancient Rameh Valley, where olive trees have been cultivated for millennia. The Souri variety — called the "Queen of Palestinian Olive Oil" — thrives here in rocky limestone soil, swept by Mediterranean winds and bathed in long sun. The result is an oil of extraordinary complexity: grassy, buttery, with a clean peppery finish that lingers.

The New York Times names Rameh's oil among the best in the world

The Story

Five generations.
One family mill.

When our ancestor Khalaf Khalaf first sowed the seeds of this enduring legacy, he could not have imagined olive oil lovers in New York and San Francisco pouring his oil over salads and fresh bread. Five generations later, his great-granddaughters — two sisters who returned from the tech world to tend their roots — carry forward the same commitment: hand-pick at peak ripeness, press within hours in our family-owned mill, never compromise.

The Process

Every drop crafted
by hand and tradition

01

Hand-Picked

Olives are harvested by hand at peak ripeness — mottled, rich in oil. No mechanical shaking. No damage to ancient branches.

02

Same-Day Press

Harvested olives go to our family mill within hours. Cold-pressed immediately to preserve volatile aromatics and polyphenols.

03

Unfiltered

Our oil is unfiltered, preserving the natural sediment and maximizing flavor depth. Vibrant green. Rich. Alive.
