The story of Khalaf Olives begins in 1862, on a terraced hillside above Rameh, where our ancestors planted Souri olives in rocky Galilee soil — a decision that would shape six generations of Palestinian-American identity.

When our ancestor Khalaf Khalaf first sowed the seeds of this enduring legacy, he could not have imagined olive oil lovers in New York and San Francisco pouring his oil over salads and fresh bread. Five generations later, his great-granddaughters — two sisters who returned from the tech world to tend their roots — carry forward the same commitment: hand-pick at peak ripeness, press within hours in our family-owned mill, never compromise.

The Variety

Souri — The Queen
of Palestinian Oil

Called "Suri" (Syrian) by locals though native to Palestine, this variety has shaped the region's culinary identity for millennia. Its large, ellipsoidal fruit yields a greenish oil of extraordinary complexity — grassy and herbaceous at the start, shifting to buttery and almond on the mid-palate, finishing with a clean, lasting pepper sensation at the back of the throat.

The Souri olive is uniquely adapted to the Galilee highlands: tolerant of drought, resistant to the olive fly, and capable of producing consistent yields from trees that can live for a thousand years. Our grove contains specimens estimated at over 800 years old — still bearing fruit.

The Land

Our grove sits in the ancient Rameh Valley, where olive trees have been cultivated for millennia. The Souri variety — called the "Queen of Palestinian Olive Oil" — thrives here in rocky limestone soil, swept by Mediterranean winds and bathed in long sun. The result is an oil of extraordinary complexity: grassy, buttery, with a clean peppery finish that lingers.

Olives are harvested by hand at peak ripeness — mottled, rich in oil. No mechanical shaking. No damage to ancient branches.
